Easy and simple cake to make on a weekend. There are many types of brownies you can make. Fudgy brownies, chewy brownies, cake brownies. Each with different texture. I made this brownies with cakey and slightly fudgy texture brownies. So yummy!
I've seen many pictures of brownies on Pinterest and most of the have cracks and crunchy surface. I once made brownies before and couldn't get that texture. Now, I've discover the trick in getting that crust on top of the brownie.
The longer you beat the egg in the batter, it will then create such crunch and slightly cracked and dry top brownies. It is the layer of meringue created when you beat the egg whites with the incorporated sugar in the batter. So, the longer you beat them, the better the result for the top surface.

95gm all-purpose flour
2 tbsp cocoa powder
1 tsp vanilla essence

Ingredients
150gm semi sweet chocolate or chocolate chips (I use Van Houten Semi Sweet Dark Chocolate)115gm salted butter
130gm castor sugar
95gm all-purpose flour
2 tbsp cocoa powder
1 tsp vanilla essence
3 large eggs
100gm walnuts, chopped
Directions
1. Prepare the baking pan with a sheet of baking paper at the bottom surface and spread some butter at the sides.
2. In a bowl, combine chocolate and butter and place the bowl on a pot of simmering water (double boiler). Melt them and stir continuously until no more lumps. Remove from heat.
3. Add in sugar and cocoa powder and vanilla essence. Combine well.
4. Add in one egg at a time. Beat the batter longer for each egg added in if you want to get a crusty top brownies.
5. Add in flour and combine well until the batter is smooth.
6. Finally, mix in the walnuts and stir evenly.
7. Bake for 25 minutes at 180C. Avoid baking too long to maintain the moisture.
