[YummyCooks] Stir Fry Potato Slices with Hot Pepper Paste

This dish came into my mind quickly when I was thinking what can I cook with ingredients I had in the fridge. I didn't refer to any recipes in the internet, so I created a real simple one myself.

I have one tub on the Korean hot pepper paste but I seldom make use of it. I guess I have to find more recipes that needs the paste. What I can think of is Kimchi Fried Rice, Kimchi Soup and maybe Stir Fry Cabbage with hot pepper paste.

Below will be the recipe for this dish:

3 to 4 servings

Ingredients:

1 medium US Russet potato, thinly sliced
Half carrot, sliced
1 medium onion, sliced
1 cloves of garlic, chopped
1 medium tomato, chopped
1 tbsp hot pepper paste
1 small bowl of water (depends on your liking)
1 tsp soy sauce

Directions:

1. Boil sliced potato for 4 minutes. Make sure it is not too soft. Set aside.
2. In a frying pan, heat up 2 tbsp of oil in low to medium heat. Then, fry garlic and onion for 1 minute.
3. Add in carrot, potato and tomato and fry for a while before adding in water. Add in the hot pepper paste and stir well.
4. Let it boil for 3 to 5 minutes. Add water if it dries up quickly.
5. Lastly, add soy sauce to taste.

ABC Soup (with sweetcorn)

I boil this soup quite often because it is simple and taste good, suitable for kids as well. I think thats why it is called ABC Soup. I can simply just have this soup with white rice for dinner.

To boil this soup, the main ingredients are chicken, potato, onion and carrot. For this post, I added in sweetcorn because I have it extra in the fridge. Tomatoes and onions can provide enough sweetness to the soup already.

For 5 servings

Ingredients:

1 big red onion, sliced (it's a must!!)
1 tomato
1 carrot
1/2 corn (optional)
1 medium to large potato, cubed (I used US potato)
800gm chicken

800ml water
Salt
Light soy sauce

Directions:

1. In a medium pot, boil water at medium heat. Add corn and onions and carrot.
2. Then, add in chicken. Once it is boiling, turn to low to medium heat. After 15 minutes, add in potato and tomato.
3. Continue to boil for another 20 minutes. In between, add salt and light soy sauce.

Chicken Cottage Pie

I've been wanting to make this long time ago after I found this simple recipe from Nasi Lemak Lover. Simple and delicious recipe, suitable for a lazy Sunday when you don't feel like going out for dinner. So I made this a couple of weeks ago for my family.

I adapted the recipe from Nasi Lemak Lover as I mentioned above. In her recipe, she did used cauliflower and since I don't have it in my kitchen, I just used broccoli.

Ingredients:

400gm chicken breasts, cubed
100gm canned button mushrooms, cubed
200gm broccoli, cut into small pieces
1 medium onion, chopped
1 carrot, cubed
1 can of Campbell Cream of Chicken (small can)
2 tbsp olive oil
Sufficient salt to taste

For the potato:
4 US Russet Potatoes (small to medium size), cut to smaller pieces
5tbsp milk
Black pepper
Salt

Directions:

1. Boil potatoes in a pot of boiling water until tender.
2. In a bowl, mashed the potatoes and add in milk, black pepper and milk. Set aside.
3. In a frying pan, heat up oil in medium heat and add in onions. Add in chicken and stir until it changes colour. Then, add in the cream of chicken and remaining ingredients. Cook for another 2 minutes and season with salt.
4. Transfer the chicken to the baking dish. Scoop the mashed potato and spread evenly. Stripes the surface with a fork. Sprinkle some dried parsley (optional).
5. Bake in a pre-heated oven at 200C for 20 minutes till the top turns slightly brown.

This hearty Chinese dish taste so good. Its been quite some time that I didn't cook this ever since the water rationing incident over here which lasted for few months.
In this recipe, I only use 3 main ingredients. Chicken, potato and carrot. Sometimes I do add hard boiled eggs as well.
