Dark Soy Sauce Chicken and Potato

This hearty Chinese dish taste so good. Its been quite some time that I didn't cook this ever since the water rationing incident over here which lasted for few months.
In this recipe, I only use 3 main ingredients. Chicken, potato and carrot. Sometimes I do add hard boiled eggs as well.

For 2-3 servings.

Ingredients:

1 medium sized US potato, sliced or cubed
1 carrot, cubed to medium size
250gm chicken (approx 6 pieces of chicken cube)
2 cloves of garlic, finely chopped
1 red onion, sliced
Few slices of ginger (optional)
1 tbsp cooking oil
1 tbsp sesame oil
1 tbsp dark soy sauce and light soy sauce
A pinch of salt


Directions:

1. Heat up the cooking oil and sesame oil in low to medium heat. Add in garlic, ginger and red onion.
2. Add in the chicken and fry for about 1 minute, follow by carrot and potatoes.
4. Add half of the water in. When it started to boil, mix in dark soy sauce, light soy sauce and salt. Stir and mix well. If you prefer it to be in darker color, you can add more of the dark soy sauce. Please don't add too much else it will turn black like charcoal.
5. Add in remaining water if you feel its too dry.
6. After 5 minutes, check if the potato has soften. Mine took about 6 to 8 minutes. Serve the dish with white rice.
