It's been a while since I last updated my blog. I was tired with the house renovations stuff and had a hard time choosing paint colours for the walls. I actually did some Cream Caramel Pudding dessert experiment last week and also Iced Green Tea Latte. First attempt was quite success and will share the recipe next time.

Pumpkin Chocolate Chip Muffins


Its Halloween month! The first thing comes to mind is always pumpkin. It is my first time making this Pumpkin muffins. All this while, I've been using pumpkins in Chinese dishes. I cooked them by steaming and boiling them in soup. Never know that pumpkin can be used in baking as well. 



I started browsing through pumpkin recipes last week and I found many of them use extra spices like nutmeg, ground ginger and all spices. I want a simpler and not too complicated recipe. Finally I found one from No Frills Recipes. No extra spices was used except for cinnamon in making the lovely Pumpkin Chocolate Chip Muffins.

I almost forgotten to share this post. I actually went for a Malacca food trip a couple of weeks ago and stopped by Seremban. A friend recommended this cafe quite some time ago and of course I've been wanting to go since I'm a dessert lover.

Bros. Cafe do serves coffee at the ground floor but I didn't try their coffee. Bingsoo (Korean shaved ice dessert) is served on the first floor and customer have to order from there.

I was having hard time in making decision on which one to order. They have several choices and finally I go for this green tea bingsoo. It was served with green tea ice cream, red bean paste-like topped with nuts and oats and some sweetener. I love the green tea ice cream. The red bean paste was too sweet for me though.

I guess RM20 is a little bit overpriced.

Fried Lotus Root with Sambal Belacan


Something new in my dinner recipe list. As usual, I went to Taman Megah morning market on Sunday to get vegetables. Bought the lotus root for RM8. Quite a big piece and I still have half of it after I cook this dish.

I think this is another way that you can cook lotus root if you prefer it to be spicy.

For 4 to 5 Servings

Ingredients:

Lotus Root, sliced (amount depending on how much you wanna eat)
Dried shrimp, chopped
3 cloves garlic, chopped
1 tsp sambal belacan paste
2 tbsp oil
Spring onions, chopped (optional)

Directions:

1. In a frying pan or wok, heat up oil in medium high heat and fry garlic and dried shrimp. 
2. Add in lotus root and fry for 2 minutes. Add some water and sambal belacan. Stir well. Let it boil for another 4 to 5minutes. Gradually add water to avoid it from drying. 
3. Add a pinch of salt to taste. I also add in spring onions.

It's Saturday and guess its a good time to post this. I've been wanting to visit Rekindle and finally I had the chance today to visit with my friend for a short catch up. I went there at about 3.30pm. Definitely a peak hour in Rekindle. But thankfully, we managed to get a place for two. 

Rekindle serves a wide range of drinks which includes coffee, tea, juices and cakes as well. Definitely a place for coffee and dessert lover like me. 

Cappuccino (RM10)
I like it!

The Cappuccino is good! The milk was at the right temperature and that allows to maintain the coffee flavour and texture. The latte art...hmm...maybe can still be improved. :)

ABC Soup (with sweetcorn)


I boil this soup quite often because it is simple and taste good, suitable for kids as well. I think thats why it is called ABC Soup. I can simply just have this soup with white rice for dinner. 

To boil this soup, the main ingredients are chicken, potato, onion and carrot. For this post, I added in sweetcorn because I have it extra in the fridge. Tomatoes and onions can provide enough sweetness to the soup already.


For 5 servings

Ingredients: 

1 big red onion, sliced (it's a must!!)
1 tomato
1 carrot
1/2 corn (optional)
1 medium to large potato, cubed (I used US potato)
800gm chicken

800ml water
Salt
Light soy sauce

Directions:

1. In a medium pot, boil water at medium heat. Add corn and onions and carrot.
2. Then, add in chicken. Once it is boiling, turn to low to medium heat. After 15 minutes, add in potato and tomato.
3. Continue to boil for another 20 minutes. In between, add salt and light soy sauce.

Chicken Cottage Pie


I've been wanting to make this long time ago after I found this simple recipe from Nasi Lemak Lover. Simple and delicious recipe, suitable for a lazy Sunday when you don't feel like going out for dinner. So I made this a couple of weeks ago for my family. 




I adapted the recipe from Nasi Lemak Lover as I mentioned above. In her recipe, she did used cauliflower and since I don't have it in my kitchen, I just used broccoli.

Ingredients:

400gm chicken breasts, cubed
100gm canned button mushrooms, cubed
200gm broccoli, cut into small pieces
1 medium onion, chopped
1 carrot, cubed
1 can of Campbell Cream of Chicken (small can)
2 tbsp olive oil
Sufficient salt to taste

For the potato:
4 US Russet Potatoes (small to medium size), cut to smaller pieces
5tbsp milk
Black pepper 
Salt

Directions:

1. Boil potatoes in a pot of boiling water until tender.
2. In a bowl, mashed the potatoes and add in milk, black pepper and milk. Set aside.
3. In a frying pan, heat up oil in medium heat and add in onions. Add in chicken and stir until it changes colour. Then, add in the cream of chicken and remaining ingredients. Cook for another 2 minutes and season with salt.
4. Transfer the chicken to the baking dish. Scoop the mashed potato and spread evenly. Stripes the surface with a fork. Sprinkle some dried parsley (optional).
5. Bake in a pre-heated oven at 200C for 20 minutes till the top turns slightly brown.
