Chocolate Banana Muffins


Here's another recipe I've been wanting to share. I've been busy recently with the new job starting this week and was trying to adapt with the new environment. I baked this Chocolate Banana Muffins the day after I baked the Walnut Butter Cake

I got lots of bananas from the morning market at Taman Megah and the uncle sold to me in a very cheap price. FYI, if you want to get vegetables and fruits in a much cheaper price, you should visit the market at 10am because they start to reduce the price by that time. :)


Bake to the muffins. I found certain recipe uses brown sugar and castor sugar while some use just castor sugar. I decided to go with the one with brown sugar. 

I got this pretty muffin cups from Bake With Yen (RM4.80 for 100pcs) :)


I can say it is simple to make this muffin. 





Makes 12 to 14 muffins (depending on the muffin cup size)

Ingredients:

125gm salted butter, room temperature
50gm castor sugar
30gm brown sugar
180gm banana, mashed (about 5 medium bananas) 
150gm cake flour
2 eggs
1/2 tsp baking powder
1/4 baking soda
3 tbsp cocoa powder
110ml milk (original recipe uses 100ml)

Directions:

1. Mix and sift flour, baking powder, baking soda and cocoa powder into a bowl. Set aside.
2. Beat butter and sugar till fluffy and turns pale. 
3. Add in eggs one at a time and combine well.
3. Add in the sifted flour in a few batches. In between, add in milk by batches too. Combine well.
4. Add in mashed banana and mix well. 
5. Scoop the batter into each muffin cup till it is 2/3rd full. (You don't wanna fill it up full because it will rise).


6. Bake in a preheated oven at 180C for about 30 to 35 minutes. When a toothpick inserted in, it should come out clean. If not, bake for another 5 to 10 minutes. If you want to have small slice of banana on top, you should place it in when it baked after the first 20 minutes. This is absolutely optional.
