Pumpkin Chocolate Chip Muffins


Its Halloween month! The first thing comes to mind is always pumpkin. It is my first time making this Pumpkin muffins. All this while, I've been using pumpkins in Chinese dishes. I cooked them by steaming and boiling them in soup. Never know that pumpkin can be used in baking as well. 



I started browsing through pumpkin recipes last week and I found many of them use extra spices like nutmeg, ground ginger and all spices. I want a simpler and not too complicated recipe. Finally I found one from No Frills Recipes. No extra spices was used except for cinnamon in making the lovely Pumpkin Chocolate Chip Muffins.

So I adapted the recipe from No Frills Recipes and made some adjustment to the measurement. Since this is my first try, I made them lesser. 


 Ingredients needed, including butter of course :)

 Texture of the beaten butter and sugar before adding egg

Here come's the chocolate chips!! :D

Makes 5 big muffins

Ingredients:


95gm all-purpose flour
60gm castor sugar
55gm butter
1 large egg
1/4 tsp cinnamon
1/2 tsp vanilla essence
1/2 tsp baking soda
55gm chocolate chips (I put 90gm and it was too sweet)
120gm pumpkins
Pumpkin seeds for deco (optional)

Directions:


1. Cube the pumpkins and boil till folk tender. Mash the pumpkins in a bowl while still warm and set aside.
2. In another bowl, sift flour, cinnamon and baking soda together. Set aside.
3. In a mixing bowl, beat butter and sugar till creamy and pale yellow.
4. Add in egg and mix well with a whisk or spatula. Beat faster and the texture will gradually combined. 
5. Then, add in vanilla essence. 
6. Sift in the flour in few batches. In between, add in mashed pumpkins and mix well. 
7. Lastly, add in the chocolate chips and combine evenly. 
8. Transfer the batter to the muffin cups. 
9. Bake at a pre-heated oven at 180C for 25 minutes. Toothpick inserted in should come out clean.



I got these cool muffin cups from Bake With Yen. 



I was surprised by the moisture of the muffins. It was super moist and the texture was so good. These super moist Pumpkin Chocolate Chip Muffins are best served warm. :)

  2. Pumpkin! I love everything pumpkin, and my kids love adding chocolate chips too. They go together so well. Your muffins look moist and delicious!
