Apple Streusel Muffins


Its the usual baking day last weekend. It was quite a random decision to bake Apple Streusel Muffins. It is my first time baking this muffin and I think it can be improved next time.

Little Thumbs Up theme for this month is Apple and its also one of the reason I chosen this recipe.


To get a crunchier top, I baked them longer by adjusting the temperature slightly lower.





Makes about 8 muffins (depending on the muffin cup size)



Ingredients:

120gm all-purpose flour
90gm sugar
60gm butter
150gm chopped apple (not too small)
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp vanilla essence
1 egg

For Streusel Topping:
30gm brown sugar
1 tbsp cold butter
1 tbsp flour
1/4 tsp cinnamon powder


Directions:

1. Mix and sift flour, baking powder and baking soda in a bowl. Set aside.
2. In a mixing bowl, combine butter and sugar till light, fluffy and pale in colour.
3. Add in egg and stir well. Mix in vanilla essence.
4. Add in the sifted flour by few batches. Fold in apple. (batter will be stiff)
5. Transfer batter to muffin cups.
6. In a small bowl, combine the streusel topping ingredients until crumbly. Sprinkle over the muffins. 
7. Bake in a preheated oven at 180C for 20 to 30minutes. Toothpick inserted in should come out clean.



Note: Reheat in the oven if you want to eat the next day. Believe me, it is best served hot!
