Strawberry Hokkaido Cupcakes

Thought that Hokkaido cupcakes would be great to enjoy on a lazy weekend. :) The first time I baked Hokkaido cupcakes last year turns out bad. The cake texture was dry and tough with weird taste. I don't know why until I baked for the second time few months back, with different recipe. Still not quite satisfied, I tried again this time it turned out super great! Thanks to Nasi Lemak Lover's recipe.

Using the same square baking liners I used previously. Always love the polka dots on the liners. There's some messy sides on the liners because I scooped and transfer the batter to another one afraid that I filled it up too much. Guess I need to be confident the next time I bake this again! 


Quite satisfy with how the cupcake turns out to be. And I absolutely love the Strawberry Cream. Remember to cool it in the fridge after the cupcakes are piped with the cream. Hokkaido cupcakes are best to served chilled. 


Makes 9 cupcakes

Ingredients

3 egg yolks (I used medium eggs)
45gm castor sugar
35gm corn oil
60ml fresh milk
70gm cake flour
3 egg whites

Strawberry Cream
60gm whipping cream
15gm sugar (about 1 tbsp)
45gm strawberry puree (I use grinder to blend it)

Directions

1. In a mixing bowl, whisk egg yolk and half of the sugar (20gm) till pale and smooth. 
2. Add in corn oil and mix. Combine well.
3. Sift in cake flour and mix until just combined. Set aside.
4. In another clean mixing bowl, beat the egg white with electric mixer till foamy. Add in sugar in few batches. Continue to beat at speed 3 till almost stiff peak. (about 7 mins)
5. Transfer 1/3 of the egg white meringue to the egg yolk batter and combine with a balloon whisk. 
6. Then, using spatula, fold in the remaining egg white meringue. Do not overmix! 
7. Transfer batter to the liners and bake at 170C for 25 minutes.

Strawberry Cream
8. Using an electric mixer, beat whipping cream with sugar till stiff peak over a bowl of ice water. 
9. Mix in strawberry puree. 
10. Pipe in the strawberry cream in the cupcakes after the cupcakes completely cool down.
