Bittergourd Soup

This is the second time I'm boiling bittergourd soup. I found most recipes  use pork bone to boil this soup but I replaced them with chicken (because it's cheaper :P )
Boiled this soup for my family and am glad they love it.









For 5 servings

Ingredients:

2 corns, break to smaller pieces (use 1 or 1.5 if you have smaller pot)
1 carrot, cubed
1 small tomato, sliced (optional)
Half chicken (more or less)
3/4 bittergourd, sliced
1 tsp salt (adjust according to the bitterness of bittergourd)
Some light soy sauce
White pepper, slightly crushed
800ml water


Directions:

1. Boil the water till simmer. Add in corn and leave it till boil.
2. Turn to low to medium heat and add in chicken, carrot and white pepper. Boil for 10 to 15 minutes.
3. Add in bittergourd. Slow boil for another 20 to 30 minutes. Boil longer for better sweetness from the corn. In between, add salt and soy sauce to taste.



Note: I boiled the soup for about 45 minutes.
